Salsa Verde Shredded Pork Stuffed Chile Relleno

Joel LOVES to make new recipes. he is an amazing cook and i love when he is in the kitchen creating something yummy! he had made chile rellenos before, so this was just a tweak to what he already made. you only need a few things for this delicious dinner!

1.5 lb pork loin roast
1 lb  of salsa verde, we picked up ours at a local mexican grocery store
6-8 poblano peppers
8 oz shredded monterey jack cheese
corn husks to wrap peppers

1. put pork loin in a crock pot. pour 10-12 oz, or 3/4 lb. salsa over the pork. just saving the last bit to garnish your peppers when they are ready. cook for about 6 hrs, or until it is cooked and shred it with two forks. stir and leave in crock pot while you get the peppers ready. the pork will soak up more of the juice as it sits.



2. soak corn husks to soften.

3. throw peppers on the grill on a high heat for 5 minutes on each side or until lightly blackened.

4. let peppers cool for 5-10 minutes. lightly peel the blackened parts of the skin off.



5. cut a slice into the pepper, clean out the seeds and any of the strings, optional

6. stuff the cheese and shredded pork into the pepper. wrap in corn husk and tie a stip of the corn husk to hold it closed. stuff and wrap all peppers.








7. place wrapped peppers back on the grill to melt the cheese. 5-10 minutes or until cheese is melted. we did 5 minutes on each side.




8. cut the wrap off, remove from husk, and enjoy! Joel added more salsa on top. I added a little sour cream. it was SO GOOD! we ate them by themselves, but next time we will serve them with beans and rice to make a complete meal.



you will need 2-3 peppers per adult. less if you serve them with beans and rice.

Spring Pictures 2010


This year we took the kids to our second annual trip to Micke Grove Park to do their spring pictures. We go with my friend Tammy and her three kids. I drive our kids to her house and we load up her car and make the quick trip to the park. Between the two of us we take a couple hundred pictures in less than an hour. We bribe the kids to get a few great shots out of those hundreds of pictures!!

We get some adorable shots, some sweet moments that you can't create, some really silly shots of the kids and lots of pictures that we have to delete!

We have so much fun getting the kids together. After we take the pictures we have a picnic lunch and let the kids play in the park. It is fun to watch the kids play together and even nicer to get some adult conversation!

Daisy Dew & Tutu


I have always enjoyed doing crafts for our kids, but recently I found it was easy to make and sell them! I have to admit that I love that people are buying what I create. It is so fun and now rewarding too!

It started with just some flower clips and then some ribbon clippies. The possibilities are endless and i am having a blast. The girls love going through my boxes and choosing what clips or headbands they want to wear.

I started to sell them online and it is going great! It is just a fan page on Facebook, but hey, it works!

DISNEYLAND!!

somehow we kept a secret from the kids for a long time. it was so hard! we got an unexpected check and decided it was time for a real family vacation!!

we drove down to Anaheim on Thurs. July 16th. the kids only knew that we were going to stay in a hotel and go to Applebee's, per Hayleigh's request! they had no idea!! we get to our hotel, after lots of carsickness in the LA traffic. yuck! the hotel was decorated with pics of Disneyland and ads were everywhere!! so Joel and I decided to tell them, we were too excited to wait too!! the kids came unglued!! they were jumping up and down on the bed for a long time, shouting "we're going to Disneyland". it was so cute!

soon after we arrived Edgar showed up. he came from San Diego to hang out with us. and to help Joel get into some trouble! LOL! we played in the pool and had dinner. it was really hard for the kids to fall asleep that night. between the hotel having cable tv and knowing that when they wake up, we were going to Disneyland!!

Friday morning came really early for Joel. he and Edgar had a late night. ;) we had breakfast at the hotel, really saved us!! and then we were first in line for the shuttle. i made the kids a shirt to wear and i have to admit, they looked adorable! =) we got the express pass so we didn't have to wait in line. Disneyland has great services for people with disablilites. then we rode every ride in fantasy land! the kids did great and loved them.

we spent almost all day in Disneyland. we rode every ride we wanted to go on, at least once!! we all had our favorites. Joel and Zack really liked the Buzz Lightyear interactive game. BrookeLynn loved the rocket ride. i think its more because Daddy rode with her and got a little sick feeling. i have to admit, that ride makes me sick too. thats why i chose to ride with Hayleigh, who likes to stay in one place and not go up and down!! Hayleigh's favorite was Dumbo. my favorite was Tower of Terror!! hands down the best ride ever! BrookeLynn was so brave and came with me. i think she regrets it now. even talking about it makes her scared!

Saturday we went to Disneyland in the morning until Disney California opened. we had so much fun. the hit of this park was definantly Lightning McQueen and Mater. BrookeLynn also rode the rapids with Daddy. she loved going on the "big" rides. we went back to the hotel and the kids took a big nap so we could go back and watch the parade.


Sunday morning after breakfast, we checked out of the hotel and headed home. we had a great trip, but was ready to go home. we stopped at Harris Ranch on the way home, its like Disneyland for Joel. ;)




the kids ask often if we can go back every summer!
